Ingredients
For the Crust
1 ½ cups vanilla wafer crumbs (or graham cracker crumbs)
4 tablespoons melted unsalted butter
1 tablespoon granulated sugar

For the Cheesecake Filling
8 ounces cream cheese, softenedIce cream bars
¼ cup granulated sugar
1 teaspoon pure vanilla extract
½ teaspoon lemon juice (optional for brightness)
½ cup heavy whipping cream, whipped to stiff peaks

For the Strawberry Crunch Topping
1 cup Golden Oreos or vanilla sandwich cookies
1 cup freeze-dried strawberries (or strawberry-flavored gelatin powder for color and sweetness)
2 tablespoons melted butter

Optional Garnish
Fresh strawberry slices
Whipped cream or piped frosting
White chocolate drizzle

Instructions
Step 1: Prepare the Crust
Start by crushing your vanilla wafers (or graham crackers) into fine crumbs. You can do this using a food processor or by sealing the cookies in a zip-top bag and crushing them with a rolling pin.
In a bowl, mix the crumbs with the melted butter and sugar until evenly coated and slightly moistened.
Line a mini muffin tin or silicone mold with paper liners. Spoon about 1 tablespoon of the crumb mixture into each liner, pressing it down firmly with the back of a spoon to form the crust.
Place the crusts in the freezer while you prepare the filling.

Step 2: Make the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese with sugar until smooth and creamy.
Add the vanilla extract and lemon juice (if using), and mix until well combined.Cream cheese
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until the filling is light and fluffy.
Spoon or pipe the filling over each prepared crust, smoothing the tops.
Place the tray in the refrigerator to chill for at least 2 hours (or in the freezer for 45 minutes for faster setting).

Step 3: Prepare the Strawberry Crunch Topping
In a food processor, pulse the Golden Oreos and freeze-dried strawberries until coarse crumbs form.
Add the melted butter and pulse a few more times until the mixture resembles chunky crumbs.
Sprinkle the mixture generously over each cheesecake bite, pressing lightly to help it adhere.Dessert toppings

Step 4: Garnish and Serve
For extra flair, top each cheesecake bite with a dollop of whipped cream and a fresh strawberry slice.
Drizzle with melted white chocolate for added sweetness and shine.
Serve chilled straight from the refrigerator for the best texture.
