Cheesy Asparagus Casserole

Ingredient

The Asparagus Foundation:

2 lbs fresh asparagus, trimmed and cut into 2-inch pieces

1 tablespoon olive oil

Salt and black pepper to taste

The Legendary Cheese Sauce:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1½ cups whole milk

1 cup shredded sharp cheddar cheese

½ cup freshly grated Parmesan cheese

4 oz cream cheese, cubed

1 teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon nutmeg (secret ingredient!)

Salt and white pepper to taste

The Golden Topping:

1 cup Panko breadcrumbs

¼ cup grated Parmesan cheese

2 tablespoons melted butter

2 tablespoons fresh parsley, chopped

½ cup shredded mozzarella (for extra cheesy pull!)

Optional Flavor Boosters:

½ cup sliced mushrooms

¼ cup crispy bacon or pancetta

1 tablespoon lemon zest

2 tablespoons sliced almonds

👩‍🍳 Cooking steps
Step 1: Prep the Asparagus
Preheat oven to 400°F (200°C). Grease a 2-quart baking dish.
Trim tough ends from asparagus (bend until it snaps naturally).
Toss asparagus with olive oil, salt, and pepper. Spread on baking sheet and roast for 10-12 minutes until bright green but still crisp. This prevents a watery casserole!

Step 2: Create the Cheese Sauce
Melt butter in saucepan over medium heat. Whisk in flour and cook for 1 minute.
Gradually whisk in milk until smooth. Cook until slightly thickened.
Reduce heat to low and stir in cheddar, Parmesan, and cream cheese until melted and smooth.
Season with garlic powder, onion powder, nutmeg, salt, and white pepper.

Step 3: Assemble the Casserole
Arrange roasted asparagus in prepared baking dish.
Pour cheese sauce evenly over asparagus, gently tossing to coat.
In a small bowl, combine Panko, ¼ cup Parmesan, melted butter, and parsley.
Sprinkle topping over asparagus, then top with mozzarella.

Step 4: Bake to Golden Perfection
Bake at 375°F (190°C) for 20-25 minutes until bubbly and golden brown.
For extra crispiness, broil for the final 1-2 minutes (watch carefully!).

Step 5: The Perfect Rest
Let casserole rest for 10 minutes before serving. This allows the sauce to thicken perfectly.
